500 gram of the Zucchini cut up small one large onion and three cloves of garlic diced small , some Mint and the stems crushed about 3 or 4 stems with the leaves on , 200 mill chicken stock salt and pepper to taste 50 grams of Butter and 100 mill cream.
Fry the Zucchini then add the onion and garlic fry until soft and has a touch of colour, add the crushed mint and stems , continue to fry for another 2 minutes add chicken stock combine well, bring to the boil turn off blend with a wand until its smooth taste for seasoning add what you want stir in the cream warm through and serve with crusty bread. I did this last night . I found it hard to get a good recipe for Zucchini it works very well Good luck Trev

Thanks Trev, i also had heaps of zucchinis not long ago and struggled with recipes. Jacquie, whats you slice recipe, i have tried a few and this kids say they are 'OK' so I need something a bit more tasty.

this isn't it, but its near to it. you can fiddle with the quanitites and add other vegetables like celery and grated carrot too.
INGREDIENTS
375g zucchini 1 large onion 3 rashers bacon 1 cup grated cheddar cheese 1 cup self-raising flour 1/2 cup oil 5 eggs salt pepper
METHOD
Grate unpeeled zucchini coarsely, finely chop onion and bacon. Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs, season with salt and pepper. Pour into well-greased lamington tin (base measures 16cm x 26cm), bake at 180°C for 30 to 40 minutes or until browned.
Serves 4 to 6.
