I have had and still going the best year for Zucchini I can remember having I have given bags full away made all kinds of stuff out of them and there still going strong anyone found the same this year I have two kinds yellow and green they look good when there cooked together Trev

We ave just started harvesting zucchinis and I am wondering what to do with them. We only planted 8 seedlings but have about 5 huge ones and more coming. Mum used to make a zucchini slice (egg and bacon pie with zucchini). Might have to look in my bible and see what Maggie would do with them

HI Shea The pie sounds interesting, the slice I have had and freeze some for later use. I also use them on the hot plate with salt pepper and garlic good with a nice steak and a jacket potatoes "oh" that was last night tonight. I am on the roast lamb thing, as I am a bachelor boy for the rest of the week I get to eat all the good stuff . Trev

In Maggies Harvest she had about 3 pages written on zucchini's and then some recipes. I am going to make some fritters tomorrow and take them for a light tea at my daughters athletics. Make enough roast lamb Trev and you can live on it for days!

HI Shea Yep I have a list that I like to do with it all Roast , cold cuts , pasties ,and a curry That lot should keep me full until MOH returns its strange how everything seems to be empty when the other half is not home and its hard enough cooking for two anyway after cooking for the whole family let alone cutting it back to a single meal each day Trev

Have you tried Zucchini and chocolate cake, zucchini relish or zucchini biscuits? All are delicious.
We too have a lot of zucchinis growing at the moment. I am thinking of creating a file of 101 ways to use zucchinis.

its hard to get the lot of them, as soon as you turn your back thinking you have the lot of them, one grows huge I then cut them into small bits and feed them to the chicks they seem to love them, and I get to eat it all back later on. All I need to do now is to feed them up on herbs and spices ;D ;D ;D Trev
